Description：本书稿利用中西方历史文献、档案资料的比较研究，在充分使用地方志、民间文献基础上，努力拓展关于京杭大运河，尤其是杭州运河与漕运知识，同时通过走访粮仓、码头等历史过程中的文化遗产点，立体地呈现杭州历史上的漕运文化特征与区域特点。Author Biography：周鸿承，1984 年生，浙江工商大学历史系主任、副教授、中国饮食文化研究所所长，浙江大学历史学博士，美国宾夕法尼亚大学东亚研究中心访问学者。他长期开设《世界饮食艺术史》等课程，是国家级精品课《中华饮食文化》讲师团队成员之一。主持有国家社科项目 "早期中国饮食文化在西方的传播"，省哲社重点课题 "浙江饮食文化史""浙江大运河与非遗" 等相关课题。周鸿承出版了多部著作，包括《味染欧罗巴：中国饮食文化在西方（1500—1700）》《一个城市的味觉遗香：杭州饮食文化遗产研究》《南宋饮食文献辑录（1—2 册）》《宋韵美食（美味佳肴）》《浙江饮食文化遗产研究》等。他还在《Sulla via del Catai》《浙江学刊》《饮食文化研究》等国内外专业期刊发表饮食文化论文多篇，并先后受邀赴荷兰、法国、韩国、日本、意大利参加国际学术会议并发表主题报告。此外，他还是世界中餐业联合会饮食文化专家委员会委员，曾参与中国杭帮菜博物馆、中国（绍兴）酱文化博物馆以及曲阜中华食礼馆（筹）策划文本方案设计。
